Grilled Veggie & Halloumi Summer Bowl with Lemon Herb VinaigretteA hearty, healthy vegetarian meal loaded with local veggies, protein-packed halloumi, and a zesty homemade dressing. This bowl packs flavor, texture, and nutrition using peak-season produce like squash, zucchini, tomatoes, peppers, and herbs. The grilled halloumi cheese adds a delicious salty bite and protein, making it a satisfying vegetarian main dish. It’s also gluten-free and easily made vegan by swapping the cheese with marinated tofu or avocado.
